Fourchette verte promotes a balanced diet in collective catering establishments (nurseries, extracurriculars, universities, nursing homes, etc.) based on the Swiss nutritional recommendations of the Federal Office for Food Safety and Veterinary Affairs (OSAV) and the Society Switzerland of Nutrition (SSN).

Fourchette verte labels are available to restaurants serving balanced and sustainable daily specials. Local support and specialized advice is provided by a dietician with an ES/HES degree from the region, in order to have the keys needed to prepare meals that are both balanced and respectful of resources.
